Oh my god I have THREE DAYS LEFT OF WHOLE30 and I’m not sure what to do with myself. Things I am craving:

- THIS FISH STEW
We ate this and basically died. That’s all I can even say about it. It was SO SO SO GOOD. It was hearty, and filling, and compliant, and amazing. Frequently—and this is especially true for Boyfriend—we continue eating things because they’re delicious and we’re feeling less full because no bread/beans/rice, but for this, we were pretty filled up with one bowl. It’s just. I just. THERE ARE NO WORDS ONLY RECIPES.
So this fish stew is simple, and you can probably use any white fish you want, like cod or halibut or snapper. We used tilapia because it is super cheap at Trader Joe’s, and also pretty cheap everywhere else. You could also use any potatoes, really, but we used red potatoes.
1 onion, diced
2 medium potatoes, diced
3 cloves garlic, minced
1 14 oz can diced tomatoes (I like petite diced)
1 tsp anchovy paste (optional)
2 cups broth (I used chicken)
1/4 cup apple cider vinegar or lemon juice (or just more broth)
1 tsp dried thyme
1 tsp dried tarragon
1 tsp smoked paprika
1 lb fish, cut into cubes
Salt and pepper
- Saute onions and potatoes until onions are getting translucent. Add the garlic, and saute for another minute. I like to add some salt at this point, because I believe in salting at every step, but you can wait until the end, if you want.
- Add tomatoes, stir, and let simmer down for about 7 minutes.
- Add broth, vinegar, anchovy paste, and spices. With the lid on, simmer the soup for 10-15 minutes, or until the potatoes are fork-tender. Make sure that your potatoes are fully cooked before the next step.
- Add the fish, and simmer until cooked through, about 3-5 minutes. Salt and pepper to taste.
And enjoy! We ate this as-is, but I think it would be excellent with some fresh herbs instead of dried, or even red chili flakes.
Those potatoes, tho. Amirite?
